The Palmer House opened in 1873 (rebuilt in 1925) and holds the title of oldest continuously operating hotel in the United States. Its kitchen also gets credit for inventing the brownie, baked for the 1893 World's Fair so ladies attending the Exposition would have a dessert they could eat with their hands.
